        I used leaf lettuce and the vegetables I had on hand instead of the greens she calls for, and 8 ounces of freshly grilled flank steak for 2 people. I would like for the vinaigrette to be a little more assertive, but with that, this is a nice vinaigrette for a light salad.

        I used half the heavy cream called for and didn&apos;t miss the extra. I substituted vegetable stock for the beef or veal broth, and it would be a different soup with a meat broth, to be sure. I vastly prefer Beard&apos;s basic Cream of Tomato Soup recipe that precedes this one.

        What I can tell you is not to mix this in the food processor. I ended up with a gloppy, textureless mess. We fried 2 patties and baked the other two in the oven for 45 minutes at 350 degrees F. Apart from the texture, the patty was rather tasteless. I&apos;ll try this again, mixing with my hands, but I&apos;m not too hopeful.

        Too salty! Maybe it&apos;s my technique, but every time I salt vegetables to crisp them up, they end up too salty, and this recipe is no exception. Otherwise, it would be a pleasant dish.

        <![CDATA[Like most of the breads in this book, this one is half bread flour, so not 100% whole wheat. My dough was a little wetter than it should be, and a little too salty for my taste. I'll try it again, though, and see whether the fault is with the recipe or with the cook. In any case, this made a good pita.

The instructions call for a baking stone and peel&mdash;I wish they had offered an alternate method for those of us without this equipment.]]>
