This comprehensive, curated collection of recipes is Mr. Beard's attempt to celebrate and codify American cookery. Many of the recipes are notated and all that I've tried are reliable. So many seem simple or standard, but when you make them, somehow they are exactly right and better than the other versions you've tried. I'd recommend this book for any serious American cook, food historian, and as a second cookbook (after "How to Cook Everything" or "Vegetarian Cooking for Everyone") for a beginning cook.
