But not necessarily a very good version of Hoppin' John. I was short on garlic, so I didn't use the full head — just the 4 cloves. I also didn't have the canned chipotle chili or the red pepper, so I omitted them. Still it was just delicious, but you can't taste the black-eyed peas at all. I plan to work up a variation using the boiled (or just baked) head of garlic, omitting the minced garlic, and leaving out the beans altogether to make a full-flavored rice dish. [ 02.10.06 ]
