Well, of course I modified it a little, by omitting the soysage. Don't trust her estimates of cornbread vs tomato; start with only 1 cup of your liquid, and then add as needed. The tomatoes extruded a lot of juice, which caused the stuffing to become a bit soggy. I might just make a version of this in a pan by itself, and either serve it as a side, or stuff the vegetables as I plate them. Made separately, I'd likely substitute a good stock for the tomato innards, depending on what was available. [ 10.08.06 ]
