Aromatic Cuban White Bean and Pumpkin Stew

This is a wonderful recipe, though I wonder if I can reproduce it. Since I didn't have the cachucha chiles, I followed her directions and substituted orange and lemon rind instead. I don't think I used as much as she called for, though, and a certain amount of lemon juice got in with the rind since I was grating a half-lemon (the only one I had in the house). I wonder if you could get the same result with a TB of orange juice and a tsp of lemon juice? (Which might be easier than always grating.) I'll make this again.  [ 02.25.06 ]
