Cypriot Chickpea Stew with Spinach

The first time I made this I used chard instead of spinach, and it was good. In that version, the celery was a key flavor. The second time I made it, with spinach, it was very good.

I'm not sure what the difference is - how different can those two versions be? But the second time it was better than the first.

A few notes: I will use half the oil called for next time - it tasted too oily to me. I'll also use only 1 tsp of salt (and I salt the beans as I cook them, FWIW) - this version tasted salty to me (though not too much so), and I like things very salty. If I think a thing tastes salty, it is oversalted. [ 02.10.06 ]
