Costa Rican Black Bean Soup

Not as much of a main dish soup as I had imagined. Very cilantro-y—too much for my husband. Maybe it was supposed to make more than this? I was surprised by the volume of broth when I removed the beans, but I had to leave the house for an hour after the beans were cooked. Perhaps if I had been able to drain the beans immediately there would be more soup.

Anyway, I thought it was delicious. Since that meal, I've been using the leftovers as a sauce to flavor black beans and rice. [ 07.31.06 ]
