Summer Tomato Pasta with greens and shaved onion

Not a 5-minute pasta unless you are a much faster chopper than I am, this is tasty summer dish. I used watercress and a shallot on mine. I use a bit less pasta than is called for in most of these recipes - 3 oz per person instead of 4 - and there was too much tomato.

For 4 people, I would use 2# of tomatoes, and maybe even a little less than that to avoid the big pile of tomato when the spaghetti is gone. Really do serve it immediately, and I prefer waiting to sprinkle the Parmesan over the top as you plate it. [ 08.01.10 ]
